East Side (Singapore Food Festival)
The East Side pays homage to the famous Katong Laksa, originally located in the Eastern part of Singapore. It’s a refreshing cocktail that starts with gin that is infused with laksa leaves, followed by a fat-washing process that allows the gin to extract the flavour from coconut oil without leaving an oily mouthfeel. We then lighten the drink with pandan and lime for a familiar yet intriguing cocktail that begs for another sip.
Serves 6 - 8 depending on how quickly you drink.
